Kathryn's Sushi Roll Recipe

What You'll Need

For the sushi rice:

  • 2 cups short-grain Japanese rice (Japonica or California medium grain)
  • 3 tablespoons Bio Tree Sushi Vinegar
  • 1 teaspoon sugar (optional — the vinegar is already lightly seasoned)
  • ½ teaspoon salt

For the rolls:

  • Nori sheets (dried seaweed)
  • Your choice of fillings — avocado, cucumber, carrot, mango, tofu, pickled ginger
  • Sesame seeds for garnish

For the sushi sauce:

  • 2 tablespoons Bio Tree Sushi Vinegar
  • 1 tablespoon good quality soy sauce
  • 1 teaspoon sesame oil
  • Fresh ginger, grated (to taste)

Step 1 — Prepare Your Rice

Wash your rice thoroughly under cold running water until the water runs completely clear. This removes the starchy powder that coats the grains and prevents them from absorbing the vinegar properly. Don't rush this step — it makes a real difference.

Cook your rice according to package instructions.

Step 2 — Season with Sushi Vinegar

While the rice is still warm, transfer it to a wooden, glass or ceramic bowl — never metal, as the acid in the vinegar may react with metal and alter the flavour.

Drizzle Bio Tree Sushi Vinegar evenly over the rice and gently fold it in using a wooden spoon or rice paddle. Fan the rice as you fold to cool it faster and give it a beautiful shine.

Allow the rice to cool completely before assembling your rolls. Patience here is the difference between sushi rice and ordinary rice.

Step 3 — Roll and Fill

Lay a nori sheet on a bamboo mat (or a clean kitchen towel). Spread a thin, even layer of seasoned rice across the nori, leaving a 2cm gap at the top edge.

Add your chosen fillings in a line across the centre — avocado, cucumber, carrot, tofu, or whatever you love.

Roll firmly from the bottom, using the mat to guide and tighten the roll. Seal the edge with a little water. Slice with a sharp, damp knife.

Step 4 — Make the Sushi Sauce

Combine Bio Tree Sushi Vinegar, soy sauce, sesame oil and fresh ginger in a small bowl. Stir and taste — adjust to your preference. This sauce works as a dipping sauce, a drizzle, or a light marinade.

Choose the right rice. Short-grain varieties like Japonica or California medium grain have the natural stickiness that holds sushi together. Long-grain rice simply won't work — it's too dry and loose.

Wash until clear. Rinsing removes the starchy powder that clings to each grain. This step ensures your rice absorbs the vinegar evenly and has the perfect texture.

Cool completely before using. Warm rice will become mushy when rolled. Fully cooled rice holds its shape beautifully. Take your time — good sushi is never rushed.

Use the right bowl. Always season in a wooden, glass or ceramic container. Metal reacts with the vinegar's natural acid and can spoil the clean, delicate flavour you've worked to create.
