Ingredients
- 1 cup raw cashews (soaked in water for 2–4 hours, then drained)
- 2 tablespoons Bio Tree Brown Rice Vinegar
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard (optional — adds depth and a gentle tang)
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon garlic powder or 1 small clove of fresh garlic
- 4–6 tablespoons water (add gradually to reach your preferred consistency)
- 1 teaspoon maple syrup or honey (optional — balances the acidity)
Method
Step 1 — Soak your cashews. This is the most important step. Place your raw cashews in a bowl, cover with water and soak for at least 2–4 hours (or overnight in the refrigerator for an ultra-creamy result). Soaking softens the cashews, making them blend into a completely smooth, silky texture — no graininess, no chunks.
Drain and rinse thoroughly before using.
Step 2 — Blend. Add your drained cashews, Bio Tree Brown Rice Vinegar, lemon juice, mustard, salt, garlic, and 4 tablespoons of water to a high-speed blender or food processor.
Blend on high for 2–3 minutes, stopping to scrape down the sides as needed.
Step 3 — Adjust consistency. With the blender running, add water one tablespoon at a time until you reach your desired consistency:
- Thick and spreadable → 4 tablespoons water (perfect for sandwiches and burgers)
- Creamy and pourable → 6 tablespoons water (ideal as a dip or dressing)
- Light and drizzleable → 8 tablespoons water (great over salads and grain bowls)
Step 4 — Taste and season. This is where you make it your own. Taste your mayo and adjust:
- More Bio Tree Brown Rice Vinegar → brighter, tangier flavour
- More salt → more savoury depth
- A touch of maple syrup or honey → balances richness and acidity
- More garlic → bolder, more punchy flavour
Step 5 — Chill and serve. Transfer to a clean glass jar and refrigerate for at least 30 minutes before serving. Chilling firms up the texture and allows the flavours to meld beautifully.
